The Ultimate High-Protein Almond Flour Cookies

Finding high-protein options for a child with limited "safe foods" can be a long-standing challenge. I developed this recipe five years ago to bridge that gap, and it has since become a staple for our entire family. They are the perfect solution for sweet cravings—we even keep a stash in the freezer for a quick, chilled snack.


  • Prep time: 10 minutes

  • Bake time: 20 minutes

  • Yields: 24 cookies

Ingredients

  • 4 cups Almond Flour

  • 1 tsp Baking Soda

  • 1 tsp Sea Salt

  • 1 cup Pure Maple Syrup

  • 1 cup All-Natural Peanut Butter (recommended: peanuts and salt only)

  • 2 Large Eggs

  • 2 tbsp Pure Vanilla Extract

  • 13 oz Milk Chocolate Chips

Instructions

  1. Preheat & Prep:

    Preheat your oven to 370°F (185°C). Prepare two large baking sheets with parchment paper or silicone mats.


  2. Mix Dry Ingredients:

    In a medium bowl, whisk together the almond flour, baking soda, and salt. Set aside.


  3. Combine Wet Ingredients:

    In a separate large bowl, combine the maple syrup, peanut butter, eggs, and vanilla extract. Mix thoroughly for approximately 3 minutes until the texture is completely smooth.


  4. Incorporate:

    Gradually add the dry ingredients to the wet mixture, stirring until a smooth dough forms. Gently fold in the chocolate chips.


  5. Bake:

    Portion the dough into 24 cookies across the two baking sheets. Bake for 20 minutes.


    Note: If you are not using a convection oven, rotate the sheets halfway through the bake time to ensure an even bake.


  6. Cool:

    Remove from the oven once the edges are lightly golden brown. Allow the cookies to cool completely on the pan to set.


Pro Tip: The Freezer Method

For the best texture, place the entire baking sheet in the freezer once the cookies have cooled to room temperature. Once frozen solid, transfer the cookies to a silicone freezer bag. Enjoying them chilled makes for a delicious, fudge-like treat!
