- The Ultimate High-Protein Almond Flour Cookies
Grain-Free | Refined Sugar-Free | Freezer-Friendly Finding high-protein options for a child with limited "safe foods" can be a long-standing challenge. I developed this recipe five years ago to bridge that gap, and it has since become a staple for our entire family. They are the perfect solution for sweet cravings—we even keep a stash in the freezer for a quick, chilled snack. Prep time: 10 minutes Bake time: 20 minutes Yields: 24 cookies Ingredients 4 cups Almond Flour 1 tsp Baking Soda 1 tsp Sea Salt 1 cup Pure Maple Syrup 1 cup All-Natural Peanut Butter (recommended: peanuts and salt only) 2 Large Eggs 2 tbsp Pure Vanilla Extract 13 oz Milk Chocolate Chips Instructions Preheat & Prep: Preheat your oven to 370°F (185°C). Prepare two large baking sheets with parchment paper or silicone mats. Mix Dry Ingredients: In a medium bowl, whisk together the almond flour, baking soda, and salt. Set aside. Combine Wet Ingredients: In a separate large bowl, combine the maple syrup, peanut butter, eggs, and vanilla extract. Mix thoroughly for approximately 3 minutes until the texture is completely smooth. Incorporate: Gradually add the dry ingredients to the wet mixture, stirring until a smooth dough forms. Gently fold in the chocolate chips. Bake: Portion the dough into 24 cookies across the two baking sheets. Bake for 20 minutes. Note: If you are not using a convection oven, rotate the sheets halfway through the bake time to ensure an even bake. Cool: Remove from the oven once the edges are lightly golden brown. Allow the cookies to cool completely on the pan to set. Pro Tip: The Freezer Method For the best texture, place the entire baking sheet in the freezer once the cookies have cooled to room temperature. Once frozen solid, transfer the cookies to a silicone freezer bag. Enjoying them chilled makes for a delicious, fudge-like treat! - Easy Soft Pretzels
A forgiving recipe for fluffy, bakery-style pretzels. When your son insists on eating 18 pretzels a week, you start reading labels. After seeing the cocktail of glyphosate-treated flour, gut-inflaming gums, and—I’m not kidding—corn syrup in the butter, I knew the freezer aisle wasn't an option. These "Safe Food" pretzels are my solution. By using organic flour and skipping the industrial conditioners, I’ve created a treat that is: ✅ Glyphosate-Free ✅ Anti-Inflammatory (No gums or stabilizers!) ✅ Sensitivity-Safe The double rise is worth the wait for a kid who needs reliable, clean fuel. Here is how I make his favorite "safe food" right in our kitchen. Prep time: 70 minutes | Bake time: 10 minutes | Yield: 6 Pretzels Ingredients The Dough Water: ½ Cup + 2 Tbsp (Warm, 105°F–115°F) Sugar: 1 Tbsp Granulated Sugar Yeast: 1 ¼ tsp Active Dry Yeast Flour: 1 ½ Cups All-Purpose Flour Butter: 3 Tbsp Unsalted (Chilled and cubed) Salt: ¼ tsp Fine Sea Salt The Bath & Topping Baking Soda: 3 Tbsp Topping: Coarse Pretzel Salt (for sprinkling) Instructions Bloom the Yeast: Combine warm water and sugar. Sprinkle yeast over the top and let sit for 5 minutes until a frothy "bloom" forms. Cut the Butter: While the yeast activates, whisk together flour and salt. Work the butter into the flour using a pastry cutter or your fingers until it resembles fine grains of rice. Knead: Pour the yeast mixture into the dry ingredients. Knead by hand or with a mixer for 3 minutes until the dough is smooth and elastic. First Rise: Shape the dough into a ball and let it rest at room temperature for 30 minutes. Shape: Divide the dough into 6 equal portions. Roll each into a long rope and twist into your desired pretzel shape. Proof: Arrange shaped pretzels on a baking sheet and let them rest for a final 20 minutes. The Alkaline Bath: Preheat your oven to 475°F. Bring a large pot of water and baking soda to a rolling boil. The Boil: Carefully submerge each pretzel in the boiling water for 60 seconds. Remove with a slotted spoon (I use two spoons, its easier!!) and return to the baking sheet. Season: Immediately sprinkle with coarse salt while the surface is still tacky. Bake: Bake for 10 minutes or until the crust is a caramel brown (if you like a darker pretzel then the below image go for 2 more minutes). Baker’s Notes Humidity Adjustment: This is a high-hydration recipe designed for a very fluffy interior. If your kitchen is particularly humid, omit the extra 2 Tbsp of water for a dough that is easier to handle. Flavor Profile: For a more traditional, bready pretzel, you can reduce the butter by half. Pro-Tip: For a professional high-gloss finish, brush the pretzels with a little melted butter immediately after pulling them from the oven. ***I never have time for this step. - Seattle Beyond the Tourist Traps
When you’re planning a trip to Seattle, you’ll find a mountain of blogs and travel sites telling you exactly where to go. And they aren’t wrong! The Space Needle and Pike Place Market are absolute must-sees. But if you’re tired of shelling out hundreds of dollars to take your family to "tourist destinations," there’s a whole other side to the city that makes the Seattle area truly unique. I’ve visited Seattle time and time again, and it remains one of my absolute favorite places. Here are my top spots to visit—but a quick pro-tip: unless you’re visiting between July and September, pack your boots and a raincoat! The Fremont Troll I have never seen anything like this anywhere else in my travels. Street parking can be a bit hairy, but a short walk to see this guy is a non-negotiable. Period. This massive 1990 sculpture of a troll clutching a real Volkswagen Beetle is iconic. After you get your photos, head over to nearby Ballard for its adorable downtown and delicious lunch spots. The Magic of Ferry Rides You could spend hundreds on a private boat tour—which is fine—but taking a Washington State Ferry is an absolute blast for a fraction of the cost. If you walk on, adults are only about $11, seniors are under $6, and kids ride free! If you want to bring your car, it’s usually under $20 (including the driver). My personal favorite is the Edmonds to Kingston run. Kingston is a perfectly walkable town filled with cute shops, and the beach in Edmonds is a fun, rocky spot for kids to play while you wait for the boat. If you’re staying right in downtown Seattle, hop the ferry to Bainbridge Island for a classic scenic voyage. McMenamins Anderson School (Bothell) Just north of Seattle is a town called Bothell with a charming main street. You have to visit this location! McMenamins took over an old schoolhouse and turned it into a wonderland. There are gorgeous year-round gardens to explore, shops on-site, a saltwater pool, and a phenomenal restaurant. Their fresh-brewed coffee is the perfect companion for a morning stroll through the grounds. What makes this place truly special is its history. Throughout the 90s, this was the Anderson School—a place for children who "didn't fit the mold" of the public school system. Looking back, I wonder how many of those kids were simply neurodivergent and lacked the support they deserved. While they may have been judged unfairly back then, McMenamins has transformed the space into a breathtakingly positive location. Go there, grab a drink, and appreciate the history. Carkeek Park This is my favorite beach in the Seattle area. With mountains in the distance, trains whistling past, a great playground, and winding forest paths, there is always something to do. If you’re there in November, you can even watch the salmon runs! My kids love searching for "lava rocks" here. While Mount St. Helens didn't actually send rocks this far in 1980, the beach is full of ancient, sea-tumbled basalt that looks just like the real deal. We also love the old-school thrill of laying pennies on the railroad tracks for the trains to flatten. At low tide, the beach transforms into a rocky adventure where you can find sea stars, anemones, crabs, and mollusks. It’s cold, it’s rugged, and it’s a total blast. Rattlesnake Ledge Trail Hike: This is easily my favorite hike in the area! It’s incredibly easy to get to and is a great family-friendly option for all ages. It’s a 4-mile round trip with an 1,160-foot elevation gain, usually taking about 2–3 hours to complete. Between the beautiful scenery and the lake you can jump into after a long, hot trek... um, it’s basically perfect! - The "Crunchy" Dream vs. Reality: A Survival Guide to a Clean Home
I had it all figured out. I was going to cook wholesome, Instagram-worthy meals every day. I was going to use 100% "clean" supplies. My life was going to be an idyllic, toxin-free dream. Then, reality hit... On the sensory side of things—my husband and oldest son both have firm boundaries on what feels comfortable. Sometimes, those "all-natural" choices just don't cut it for their sensory needs. So, yes, I buy the "generic, chemical-dipped" products to get us through the day. No guilt, just survival! That said, when I find a clean alternative that actually makes everyone happy? It becomes a holy grail staple. After a lot of trial and error (and a few family interventions), here is what actually made the cut in our house. 1. The Hard Water Hero: Nellie’s Dishwasher Powder We live in an area with some of the hardest water in the country. Even with a softener, dishwasher stains are a constant battle. I’ve tried every natural brand under the sun, and Nellie’s is the undisputed champ. Bonus: It comes in an adorable vintage tin and lasts for 100 loads. https://amzn.to/41MrONL 2. The Paper Product "Intervention" I’ll admit it—the Instagram ads got me. I was convinced our traditional paper products were the root of all our problems. I tried "Who Gives a Crap" and "Plant Paper," and... my family staged a literal intervention. My husband refused the toilet paper, my son wouldn't blow his nose on the tissues, and the paper towels were, frankly, garbage at actually cleaning. We are now back to our "Big Three" comforts: Charmin, Bounty, and Puffs Plus. 3. Laundry Detergent That Actually Works: Blueland Tablets I even went through a phase of making my own laundry soap. It was fine, but the ingredients constantly separated and it was a mess. After testing everything, Blueland is my favorite. My clothes actually feel clean, and the colors stay bright. https://go.shopmy.us/p-53533266. 4. The "Everything" Soap: Dr. Bronner’s (Almond) This is a total no-brainer. I use it for dishes and in our foaming hand soap dispensers (diluted 3-to-1 with water) ( https://amzn.to/3OSut5w ). The almond scent is heavenly and it’s everywhere in our house. https://amzn.to/4cTPuG5 5. The Multi-Purpose GOAT: Branch Basics You can make your own cleaning sprays, but most of them smell weird and leave a film on the counters. Branch Basics concentrate is a 10/10. One huge bottle lasts forever and it actually leaves things feeling clean. https://amzn.to/41K4nEQ 6.The Corded Comeback: Dyson Ball Animal 3 Extra Upright Listen, I’ve tried them all—the pricey Dyson cordless, the Amazon dupes, the "as-seen-on-TV" promises. I’m officially calling it: I’m done! Nothing, and I mean nothing, cleans like a vacuum with a cord. It’s got that "unlimited power" energy that actually gets the grit out. Prove me wrong, I’ll wait. https://go.shopmy.us/p-53718400 7.My Floor’s New BFF: Bissell PowerFresh Deluxe Steam Mop I have "drama queen" floors—they show every single smudge, footprint, and speck of dust. I used to be a full-time professional mopper until I found this life-saver. It’s super light, easy to maneuver, and has adjustable heat so I don’t cook my hardwood floors. Clean floors, zero stress.to maneuver, and has adjustable heat so I don’t cook my hardwood floors. Clean floors, zero stress. https://go.shopmy.us/p-53718964 8.The One Exception: The Toilet War ZoneI don’t know what it is about raising boys, but the area around the toilet is a daily war zone. I’ve tried every natural scrub and spray, but with boys under the age of eight, the smell of urine is persistent and undefeated. My only remedy? Bleach. I know, I know—it’s the "worst"—but I simply cannot live like this. Sometimes, the blue jug is the only thing that wins the war.
- Slow-Roasted "Fall-Off-The-Bone" Baby Back Ribs
This "set it and forget it" method is the perfect solution for busy schedules, offering a crowd pleasing alternative to standard slow-cooker meals. By utilizing a low-temperature oven-braise in foil, the ribs remain incredibly moist while developing a deep, complex flavor profile. Prep time: 15 minutes Cook time: 3 hours 30 minutes Yields: 1 full rack Ingredients Proteins: 1 full rack Baby Back Ribs The Signature Dry Rub: ¾ cup Brown Sugar (packed) 2 tbsp Kosher Salt 2 tbsp Onion Powder 1 tbsp Garlic Powder 1 tbsp Smoked Paprika 1 tsp Chili Powder 1 tsp Ground Mustard 1 tsp Freshly Cracked Black Pepper ½ tsp Red Pepper Flakes (optional, for heat) Instructions 1. Preparation and Dry Rub Preheat your oven to 275°F (135°C). Prepare a large sheet of heavy-duty aluminum foil on a baking sheet—ensure it is large enough to completely encase the rack. On the foil mix together all dry spices until the brown sugar is evenly incorporated. 2. Dress the Ribs For the most tender results, remove the silver skin (membrane) from the back of the ribs. Insert a blunt knife under the membrane over a middle bone to loosen it, then insert your fingers and get a firm grip and pull it away in one piece. Generously coat all sides of the ribs with the dry rub, pressing the spices into the meat. 3. The Initial Braise Place the ribs meat-side down on the foil and seal the packet tightly to prevent steam from escaping. Transfer to the oven and roast for 3 hours. 4. The Glaze Reduction Carefully open the foil packet (watch for steam) and drain the accumulated cooking juices into a saucepan. Increase the oven temperature to 350°F (175°C). Bring the juices to a boil over medium-high heat and reduce for approximately 5 minutes, or until the liquid has thickened into a syrupy glaze. 5. The Final Finish Pour the reduced glaze back over the ribs. Reseal the foil and return to the oven for a final 30 minutes. 6. Service Remove from the oven and let the meat rest for 5–10 minutes before slicing. The bones should slide easily away from the meat for a perfect, tender finish.
- The Boy Mom Summer Style Guide: Statement Pieces for a Full-Contact Season
As summer hits, my "on-the-go boy mom" closet needs a serious upgrade. Between theme parks, zoo trips, and local playgrounds, being a boy mom is basically a full-contact sport. I need my style to say "I have excellent taste," but also "I can definitely climb that jungle gym if I have to." This summer, we’re ditching the boring basics and leaning into bold, fun prints. Think oversized silhouettes, vintage-wash graphics, and breezy sets that make getting dressed the easiest part of your day. Throw your hair in a low bun and skip the makeup—the outfit is going to do all the heavy lifting. Here are my favorite finds to keep you looking cool while you’re keeping up. 1. The "Dressed in Lala" Short When it’s 100 degrees at the park, denim is a "no" for me. Enter Dressed in Lala. If you aren’t living in Lala yet, your closet is missing its soul. Their original designs are famous for that "more is more" energy, and the prices are incredibly reasonable. These two shorts are breezy alternatives to tight fitting jean shorts. 2. The "IT" Tees: Sabbi & Coastal Chaos My go-to for "Graphic Sass." Sabbi vibes are all about positive messaging and edgy styles. These sell out fast, so don't sleep on them! The Lace Concert Tee: My absolute favorite for mom-style at a show. Matching "Shining Away" Tees: I cannot get enough of this mommy-and-me matching moment. 3. The "One-and-Done" Sometimes I just don’t want to assemble a whole outfit. An "adult onesie" is the answer. If you love Free People fashion but want a better price point, you will be blown away by these active jumpers. The All-Day Romper: Throw this on to hike a trail, then head straight to Karate class. It’s affordable and show-stopping. The Airy Staple: You will want to live in this. It’s super breathable and transitions perfectly into fall with a denim jacket. Shop here The Foundation: Amazon Basics To balance out those statement pieces, I stick to high-quality Amazon basics. I’m a fan of the "less is more" approach to layers—if I’m wearing a tank, it needs a built-in bra. Two birds, one stone, right? Ribbed High-Neck Racerback: Comes in 20 colors; I already own three. Shop here Lemedy Longline Padded Crop: These have lasted me over two years. They are perfect with high-waisted pants (though if you have a long torso, keep in mind they are a true crop!). Shop here
- Weekly Political Snapshot
Here are the topics that had my attention this week. POWELL OUT, WARSH IN? The DOJ quietly dropped its criminal probe into Federal Reserve Chair Jerome Powell — clearing a major legal cloud over him. But don't pop the champagne yet: the move appears to pave the way for the Senate to confirm Kevin Warsh, Trump's handpicked nominee to replace Powell as Fed chief. A political reshaping of the nation's central bank may be closer than ever. Jerome Powell was appointed Fed Chair by Trump in 2017, then reappointed by Biden in 2022. Their relationship soured badly — Trump spent years publicly attacking Powell for not cutting interest rates fast enough, even floating the idea of firing him. A criminal probe had been hanging over Powell, and its sudden dismissal looks less like an exoneration and more like a political maneuver to smooth the path for Kevin Warsh, a former Fed governor and longtime Trump ally, to take over. The US Navy is enforcing a full blockade on Iranian ports — redirecting at least 33 ships since April 13. Meanwhile, Jared Kushner and Steve Witkoff were set to fly to Pakistan for direct talks with Iran, but Iran's Foreign Ministry threw cold water on that, saying "no meeting is planned." Iran's FM is in Pakistan, but insists it's just for mediation — not direct US negotiations. Confusing? Absolutely. High-stakes? Very. Tensions between the US and Iran have been building for decades over Iran's nuclear program, regional proxy militias, and oil. Things escalated sharply in early 2026 when the US launched military strikes against Iran, triggering a war. The US then imposed a naval blockade on Iranian ports — a dramatic escalation. Pakistan, which has longstanding ties with both sides, stepped in as a mediator, but Iran and the US can't even agree on whether they're actually talking to each other. Critics on both sides of the aisle are pushing back — civil libertarians hate it, and some hardliners want more restrictions. Watch this space as the clock ticks down. Section 702 of the Foreign Intelligence Surveillance Act allows US intelligence agencies to collect communications of foreign targets — but Americans' communications often get swept up too, which is the controversy. The program requires periodic reauthorization by Congress. It's been a rare flashpoint where libertarian-leaning Republicans and progressive Democrats find common ground in opposing it, while the national security establishment fights hard to keep it alive. National GOP groups still have more cash on hand overall — but the enthusiasm gap is real and Republicans are sweating. The 2026 midterms are shaping up as a major referendum on Trump and the Republican-controlled Congress. Historically, the party in power loses seats in midterms, and Democrats are energized. James Talarico is running in Texas — a state Democrats have been trying to flip for years. His $27M haul signals serious momentum, though Texas has proven tough to crack and national GOP groups still hold a big financial cushion. Israeli strikes killed at least six people in southern Lebanon on Friday, while Hezbollah fired back at Israeli armored vehicles. Both sides are blaming each other for violations. The ceasefire is technically holding... barely. Israel and Hezbollah fought a brutal war in 2006, and tensions never fully resolved. After the Gaza conflict reignited in 2023–24, Hezbollah began trading fire with Israel from southern Lebanon. A ceasefire was eventually brokered, but it has been fragile — both sides accuse each other of violations regularly, and a full resumption of hostilities remains a real risk. The move has ignited fresh debate over federal intervention in family law matters. This case involves a 10-year-old child from Utah whose parents are in a custody dispute centered on the child's gender identity. One parent apparently took the child to Cuba. The Trump administration, which has made restricting gender-affirming care for minors a major policy priority, sent a DOJ plane to retrieve the child — an extraordinary use of federal resources in what would normally be a private family matter.
